Rava Kesari

Rava (Sooji) kesari with sugar, ghee & cashew is a sinful sweet delicacy. This is the easiest sweet that can be made in minutes. Rava kesari also called as 'sojji' is very popular in south India - 'sojji' & 'bajji' is the most popular combo in a 'bride seeing' ceremony.


My hubby was watching TV and suddenly, he looked at me with a twinkle in his eyes. I knew he was going to ask me something and was just waiting. Then, he goes "Can you make some rava kesari for me?"and that's tonight's story of we adding some additional calories to our waistlines, but it was worth it :) Thanks to him for helping me add another recipe to the blog.

Ingredients
Rava (Sooji) - 1/2 cup
Sugar - 1 cup
Water - 1 cup
Cardamom powder - 2 pinches
Cashews roasted in ghee - few
Ghee - 1 ladle
Food color / Kesari powder - 1 pinch

Method
In a kadai/pan, heat a spoon of ghee and roast the cashews till golden brown and keep aside.  In the same pan, roast the rava till you get a nice aroma and keep it aside. Again, in the same pan, add water and let it boil. Now, gradually add rava and stir it constantly. Make sure that no lumps are formed. Once rava is cooked, add sugar, cardamom powder & kesari powder. Keep stirring and add ghee in between. Stir until ghee mixes with the kesari & kesari doesn't stick to the side / bottom. Add roast cashews and serve it warm.

Tips:
  • Make sure to roast rava in ghee, otherwise kesari gets rubbery/chewy.
  • Just before all water gets evaporated, add sugar.
  • Keep stirring the kesari so that there are no lumps formed.
  • Roasted raisins can also be added along with cashews.
  • Kesari tastes best when served warm.

  1. That is really a good evening snacks with hot 'vaazhakkai/onion bhajji' and a strong filter coffee. (SKC - Sweet, Kaaram and Coffee). I remember visu's dialogue in 'samsaram adhu minsaram... -godavari konjam kesari podumaaaa.....' Just a tip -add the cardamom in pieces by simple hand crush than adding it powdered.
