A warm & comforting vegan hash that uses radish, sweet-potatoes and curly kale and spiced up with curry powder. Extremely delicious and can be prepared in minutes. Pairs up so well with rice/roti.
You could replace curry powder with garam masala and play around with the flavors. Amchur powder adds a nice tangy touch to this recipe. Chop sweet potatoes twice the size of radish as they can cook fast and mush up really easily.

Serves - 4
1 medium Onion, chopped
2 cups chopped Radish
2 cups chopped Sweet potato / Jewel yam
3 cups chopped curly Kale
1/2 tsp Cumin seeds
1/4 tsp Turmeric powder
1/2 tsp red Chili powder
1/2 tsp Curry powder
a big pinch of Amchur powder, optional
Salt to taste
2 tbsp Olive oil
Heat 2 tbsp of oil in a large pan. When hot, add cumin seeds and let it sizzle.
Add onion and saute until translucent. Add chopped radish, chopped sweet potato, turmeric powder, red chili powder, curry powder, salt and cook for 8-10 mins or until the vegetables are cooked through.
Add chopped kale and saute just until the leaves wilt. Sprinkle amchur powder on top, mix well.
Remove from heat and serve hot with rice/roti.
