Authentic Indian milk tea spiced up with ginger & cardamom. Hot & cozy chai is "the" perfect choice to warm up your cold mornings or to unwind after a long, stressful day. This recipe serves just ONE, but you can easily double (or) triple the recipe for more servings.

2/3 cups water
2 tsp tea powder, I use "Wagh Bakri" Premium Tea, Special International Blend
2 tsp sugar, adjust to your taste
1/2 inch ginger, grated
2 cardamom pods, seeds & pods separated
2/3 cups milk, I used 2% reduced fat milk
Method
In a small sauce-pan, bring water, tea powder, grated ginger, cardamom pods & seeds, sugar to a boil, on medium heat. Let it continue to boil for 3-5 mins.
Add milk, bring it to a boil and remove from heat. Using a strainer, strain just the tea into the cups.

Serve hot with biscuits.
Notes
- This recipe with 2 tsp of tea powder makes strong tea. However, if you want to mellow it down, 1 to 1.5 tsp will do the trick.
