Pudhina Roti

Pudhina (Mint) roti is a flavorful addition to the roti (Indian flat bread) varieties and healthy too! Mint helps in elevating the flavor of regular rotis with a pleasant color, aroma & taste. Mint lovers are sure to love this roti and it tastes simply great with plain yogurt / raitha / pickle as side. I made tomato dip (raitha) to go with this.

Mint - 2 cups
Green chillies - 2-3 nos
Salt - to taste
Wheat flour - 2 cups
Oil/Ghee - For brushing on rotis

Wash the mint thoroughly in water. Drain and separate mint leaves from the stems and discard the stems. Grind mint leaves, green chilies without water and keep it aside.

In a large mixing bowl, take wheat flour, salt & ground mint leaves and mix well. Add sufficient water to this mixture and knead it into soft pliable dough. Place the dough in a container and cover it with a lid.

After an hour or two, make small balls (desired size and quantity) and flatten each ball with a rolling pin into rotis with the help of little dry wheat flour.

Heat a tawa or griddle. Once the tawa is hot, place rolled chapatti on the hot griddle and heat it on one side, add little oil (if you like it), turn it and heat the same way on the other side till brown spots appear on the surface.

Remove it from the tawa/ griddle, brush little ghee on both the sides and serve it hot.
