Corn & Avocado Sandwich

A great way to start your mornings... t(o)asty, healthy, satisfying breakfast that you can put together in under 15 mins. Can you find a better recipe than this for your busy mornings??!! I don't think so..

Breakfasts have to be this good.. very quick & effective, no compromise on the ingredients, rightly portioned and perfectly filling.. can it get any better?! Just trust me and try this recipe for your breakfast tomorrow... and everything 'll start to make perfect sense for you!!

Basic Info

Serves - 2 sandwiches


Ingredients
1 Avocado
1 ear of corn
1 pinch of onion powder
1 tbsp of finely chopped cilantro
Lime juice from half lime
Salt & pepper to taste

2 slices of cheese of your choice (I used mild cheddar)
4 slices of bread of your choice (I used buttermilk bread)
Butter/Ghee, just enough to smear

Few slices of fresh vegetables like cucumber, tomatoes

Method
Roast the ear of corn in a grill/oven, remove the corn kernels and keep it ready.

Cut the avocado into two halves, remove the seed and using a spoon, scoop out the avocado from the peel. Using the back of fork roughly mash the avocados.

In a mixing bowl, mix mashed avocados, roasted corn kernels, onion powder, salt, lime juice, pepper, chopped cilantro and mix until well combined.


Next, smear little ghee on both the sides of 2 bread slices. Layer bread, cheese, corn-avocado spread, fresh vegetables, one on top of another. Sprinkle little pepper on top and cover with the second bread. 

Use a panini press (or) cast-iron skillet and toast bread until both sides of the sandwich are brown & toasty. Serve immediately.
